I mentioned in a previous post that we’d purchased an Ikea version of a Le Creuset Dutch oven. Many great meals from it so far and it’s been easy to clean up afterward. Since it’s still relatively chilly up here in Scotland, we decided to have another stew-like meal over the weekend.
At the ol’ shoppe, we nabbed some turnips, carrots, charlotte potatoes, onions, white wine, red lentils, spices … then things went wrong. When it came to choosing the meat, I suffered a temporary frontal lobotomy – it might be permanent depending on your views of motherhood-induced insanity. For some unknown reason, I picked a boneless pork loin. Computer says “no.” An otherwise excellent grouping of veggies was rendered spectacularly craptastic by the addition of pork-flavoured shoe leather.
A similar concoction was made only a couple of weeks earlier with belly of pork and the results were mighty tasty. /smacks forehead
Note to self: In the future, don’t be mentally deficient and pick a FATTY cut of meat for long-term oven roasting.
